1. Cut the mushrooms into quarters

Clean the mushrooms and cut each one into four pieces. Keeping the pieces relatively large helps them retain their texture as they cook and gives the finished tapa a more substantial bite.

2. Slice the garlic

Slice the five garlic cloves into thin pieces. Sliced garlic releases its flavor gradually into the olive oil, which is important for achieving the gentle garlic infusion characteristic of this preparation.

3. Combine the mushrooms, garlic and olive oil

Place the quartered mushrooms and sliced garlic directly into a skillet. Add a generous drizzle of extra virgin olive oil, making sure there is enough oil to coat the mushrooms and allow the garlic to infuse as everything cooks together.

4. Cook gently without browning the garlic

Cook over medium-low heat, stirring from time to time. The goal is not to fry or brown the garlic. Instead, allow the mushrooms and garlic to cook gently together so the olive oil becomes infused with the garlic while the mushrooms absorb that flavor.

Continue cooking until the mushrooms become tender and develop a deep golden-brown color, usually around 15–20 minutes, depending on their size and moisture content.

5. Finish with salt and parsley

Serve the mushrooms hot, preferably in a traditional earthenware dish that retains heat well. Season with salt to taste and scatter freshly chopped parsley over the top just before serving.
