Zucchini in Mediterranean Cuisine
Zucchini is a vegetable from the Cucurbitaceae family, which also includes pumpkins, cucumbers, and watermelons. Although commonly consumed as a vegetable, zucchini is botanically a fruit. Its low calorie content and high water content make it an ideal food for a healthy diet. With only about 15 calories per 100 grams, zucchini is a perfect choice for those looking to maintain or lose weight while still enjoying flavorful, nutritious food.
Zucchini plays an important role in the Mediterranean diet due to its versatility in various dishes. It can be eaten raw in salads or cooked in a variety of ways, such as grilled, steamed, in soups, stews, or even pureed. It pairs well with other key Mediterranean ingredients like olive oil, tomatoes, fresh herbs (such as oregano and basil), garlic, and nuts.
One of the most popular preparations in the Mediterranean region is “grilled zucchini,” where it is cooked over an open flame with a drizzle of olive oil, salt, and pepper. It is also commonly found in dishes like “frittatas” (Italian omelets) or in traditional Spanish stews like “pisto Manchego,” a vegetable mix that often includes zucchini, eggplants, tomatoes, and onions.
Olive oil, a staple of the Mediterranean diet, plays an essential role in zucchini preparation. Not only does it enhance the flavor, but it also provides healthy fats that help the body absorb the nutrients and antioxidants found in zucchini.

Zucchini Millefeuille
The zucchini millefeuille is a quick and easy recipe to obtain a nutritious dish without having to spend hours in the kitchen, with a few ingredients and a hit of oven we have a delicious dish that fuses the juiciness of the zucchini with the intense flavor of the cured ham, and joining these ingredients, a melted cheese that will give consistency to this original dish.
Ingredients
- 2 zucchinis
- 200g of cured ham (16 slices)
- 250g of cheese (50g for grating and the rest for slicing and melting)
- 2 tablespoons of olive oil
- 100g of grated tomato or tomato sauce
- A pinch of salt
Instructions
- We clean the zucchinis and cut them into strips, then leave them with a pinch of salt on absorbent paper to remove excess moisture.
- The slices we’ll use for the top and bottom can be thicker, while the ones for the middle should be as thin as possible.
- Even if some of the slices break a little, it doesn't matter since they’ll be placed in the interior between the ham and cheese.
In a rectangular oven-safe dish, we layer zucchini, ham, and cheese according to our preferred structure. - We finish with a final layer of zucchini, topping it with tomato sauce, a little oil, and salt.
- We grate some cheese on top and bake for 30 minutes in a preheated oven at 180°C.
- After 5 minutes of cooling, we plate carefully to avoid the zucchini sliding off, as it tends to be slippery.
Notes
We can further enhance the flavor of the zucchini by sprinkling some spices on top of the tomato such as oregano, pepper or basil.
