For the Almond Milk Béchamel

Instructions

1. Cook the Vegetables

Sauté the aromatics: Heat the extra virgin olive oil in a large pan over low heat. Add the minced garlic and sauté gently for 1–2 minutes until fragrant but not browned.

Soften the alliums: Add the finely sliced spring onions and leeks to the pan along with a pinch of sea salt. Cook for about 5 minutes until translucent.

Incorporate the carrots: Add the finely diced carrots to the pan and cook for another 5 minutes, stirring occasionally.

Finish the veggie filling: Toss in the chopped mushrooms and cook for an additional 5 minutes, or until all the vegetables are tender and any liquid released by the mushrooms has evaporated. Remove from heat and set aside

2. Prepare the Almond Milk Béchamel

Melt the fat: In a small saucepan, melt the unsalted butter over medium-low heat.

Warm the milk: Separately, ensure your unsweetened almond milk is warmed slightly (do not let it boil) to prevent lumps when combining.

Create the roux and sauce: Whisk the whole wheat flour into the melted butter, cooking it for 1 minute to remove the raw flour taste. Slowly pour in the warm almond milk in a steady stream, whisking constantly to ensure a smooth, emulsion-like texture.

Thicken and season: Continue whisking over medium-low heat until the sauce thickens to a velvety consistency. Remove from the heat and stir in the ground nutmeg, sea salt, and black pepper.

 

3. Assemble and Bake the Lasagna

Preheat the oven: Preheat your oven to 225 °C (437 °F).

Hydrate sheets (if necessary): If using regular dry lasagna sheets, boil them in a large pot of salted water according to the package instructions. If using oven-ready (no-boil) sheets, prepare to layer them directly.

Build the layers: In a medium baking dish, spread a thin smear of béchamel on the bottom. Lay down your first layer of lasagna sheets. Spread a generous portion of the sautéed vegetables, followed by a few slices of fresh mozzarella. Repeat these layers until all ingredients are used.
