Garlic Pepper Tenderloin Appetizer – A Flavorful Spanish Bite
Red Pepper in World Cuisine
The sweet red pepper is one of the most popular varieties of peppers in global cuisine. Its vibrant red color, sweet flavor, and versatility have made it an essential ingredient in many culinary traditions. However, behind its widespread use lies a fascinating history that stretches back thousands of years.
Peppers originated in the Americas, where they have been cultivated for over 6,000 years. Pre-Columbian civilizations, such as the Mayans and Aztecs, incorporated various types of peppers into their diets, although hot peppers were the most commonly used at the time. Early European explorers referred to it as “pepper of the Indies,” as they initially believed it was related to black pepper (Piper nigrum), which was highly prized at the time. However, they soon realized it was a different spice, with a distinct taste that ranged from sweet to very hot.
When Christopher Columbus arrived in the Americas in 1492, he brought the bell pepper back to Europe. There, farmers began selecting varieties to produce sweeter peppers. Spain and Portugal were the first European countries to cultivate them. From the Iberian Peninsula, the bell pepper spread to other parts of the world through trade, reaching Asia and Africa. In India, it became an integral part of local cuisine, often replacing black pepper.
Red pepper in Spain and the Mediterranean
The sweet red bell pepper is a versatile ingredient that can be enjoyed raw, roasted, sautéed, or pureed. In Mediterranean cuisine, it plays a key role in dishes like the traditional pisto manchego from Spain and ratatouille from France.
It is also commonly used in sauces, such as the Catalan romesco, or as a filling for dishes like stuffed peppers, typically filled with meat, rice, or cheese. Its natural sweetness makes it the perfect complement for balancing spicier dishes or those with bold, intense flavors.

Ingredients
- 2 Iberian pork loin steaks
- 2 slices of bread
- 1/2 red bell pepper
- 2 garlic cloves
- 2 tablespoons of olive oil
- 1 pinch of salt
- 1 pinch of pepper
Instructions
- Heat the olive oil in a frying pan, slice the two garlic bulbs and add them to the oil. Let them brown a little, without burning them.
- Cut the red pepper into strips and add to the pan. Cover and cook over a low heat for 20 minutes. Stir from time to time so that the pepper does not burn and cooks well.
- When we see that the pepper is caramelising with its own juices, add the tenderloin steaks with a little salt and pepper so that they take on the flavour.
- When the meat is ready, without overcooking it so that it does not dry out, remove it from the heat and place it on the bread. The base will be made of pepper and garlic, to which we will put the meat cut into strips so that it can be eaten in several bites.
