Ingredients

  • 600 g Iberian “Secreto” pork
  • 200 g mixed wild mushrooms
  • 1 Italian green pepper
  • 2 cloves garlic
  • 1 medium onion
  • 50 ml crushed tomato
  • 50 ml extra virgin olive oil
  • 300 g bomba rice
  • 750 ml beef stock
  • 1 tablespoon ground saffron (or a good pinch of saffron threads)
  • Salt and freshly ground black pepper, to taste

Instructions

    Prepare the base

    Heat the olive oil in a large paella pan (or wide skillet) over medium heat.

    Peel and slice the garlic thinly, then add to the pan.

    Sauté until lightly golden, being careful not to burn it.

    Brown the meat

    Cut the Iberian secreto into 2–4 cm (1–1½ inch) pieces.

    Season with salt and pepper, then add to the pan.

    Sear the meat until nicely browned on all sides.

    Push the meat toward the edges of the pan, leaving the center open.

    Cook the vegetables

    Finely chop the onion and dice the green pepper.

    Add both to the center of the pan, cooking slowly until softened and translucent (about 8–10 minutes).

    Stir occasionally to prevent sticking.

    Add tomato and deglaze

    Pour in the crushed tomato, stir, and use a spatula to scrape up any browned bits from the bottom of the pan (these add rich flavor).

    Cook until the tomato reduces and loses most of its liquid, about 5 minutes.

    Add the rice

    Stir in the bomba rice, coating it evenly in the pan juices until it becomes slightly translucent (nacarar)—about 2 minutes.

    Add mushrooms
