Instructions

1. Cook the Root Vegetables

Fill a large pot with salted water. Peel the potatoes, carrots, and onion, then add them to the pot. Bring to a boil over medium heat, then reduce to a gentle simmer and cook for about 40 minutes, or until the potatoes are fork-tender.

2. Add the Green Beans

Meanwhile, wash the green beans, trim the ends, and cut them into 3–4 cm (1½-inch) pieces. Add them to the pot during the last 10–12 minutes of cooking so they become tender while retaining their vibrant color.

3. Serve

Drain the vegetables well. Cut them into smaller pieces if desired and arrange them on a serving platter. Drizzle generously with extra virgin olive oil, season with salt, and serve warm. For extra freshness, finish with a squeeze of lemon juice or a splash of mild wine vinegar.
