Instructions

  • Slice both into thin, even slices (about 2–3 mm / 1⁄8 inch thick) so they cook evenly.

Cook the vegetables

  • Heat the olive oil in a non-stick frying pan over medium heat.
  • Add the potato and pumpkin slices.
  • Cook for about 20 minutes, stirring occasionally and flipping the pieces so they don’t stick or brown too much. Usually I cover the pan with a lid — the steam will help cook the vegetables through without needing extra oil.
  • Check that the vegetables are soft and fully cooked before moving to the next step.

Beat the eggs

  • In a large bowl, beat the eggs with a pinch of salt until smooth.
  • Add the cooked potato and pumpkin mixture to the eggs. Stir gently to combine.

Cook the omelette
