This exquisite cut is particularly popular in Extremadura, Spain and Portugal, where Iberian pigs are raised in open pastures and fed a diet rich in acorns, herbs, and other natural ingredients, enhancing the exceptional quality of their meat.

Ingredients

  • 750 g of Iberian "Secreto" (pork cut)
  • 3 medium potatoes
  • 1 glass of white wine
  • 1 glass of beef broth
  • 4 garlic cloves
  • 30 g of honey
  • 15 g of mustard
  • 1/2 lemon
  • 6 tablespoons of olive oil
  • 1 pinch of coarse salt
  • 1 pinch of pepper
  • 1 sprig of thyme
  • 1 sprig of rosemary

Instructions

  1. Clean and peel the potato, cut it into half-moon slices (not too thin), and place them in a baking dish.
  2. Add the 4 whole, unpeeled garlic cloves, the wine, 4 tablespoons of olive oil, and a pinch of salt. Bake for 10 minutes at 200°C (392°F).
  3. In a bowl, mix the mustard, honey, 2 tablespoons of olive oil, and a splash of freshly squeezed lemon juice. Stir well until the mixture is liquid.
  4. After 10 minutes in the oven, add the Iberian pork "secreto" and the beef broth, along with the rosemary and thyme sprigs to add aroma to the dish. Bake for 40 minutes.
  5. After 20 minutes, flip the meat and check if more broth is needed. After 40 minutes, check if the meat and potatoes are well cooked.
  6. Remove the dish from the oven and pour the prepared sauce over the meat.
  7. Return the dish to the oven, increase the temperature to 220°C (428°F), and bake for 5 more minutes to allow the juices to blend with the meat.
  8. Finally, remove the meat from the oven, slice it, sprinkle coarse salt and pepper on top, and serve with the potatoes.
