Although the traditional recipe is based on a mix of legumes, vegetables, and some fruits, its preparation can vary depending on ingredient availability, personal taste, or local tradition of different Spanish regions.

  • In some versions, especially in Valencia and nearby areas, rice or noodles are added to the stew, turning it into a type of thick soup.

Ingredients

  • 1/4 kg of chickpeas
  • 1/4 kg of white beans
  • 1/4 kg of green beans (bajocas)
  • 1/4 of pumpkin
  • 2 peeled pears
  • 1 ripe tomato
  • 1 small onion
  • 1 tablespoon of olive oil
  • 1 liter of water
  • 1 tablespoon of salt
  • 1 tablespoon of paprika
  • 3 threads of saffron
  • 1 tablespoon of mint.

Instructions

  • On one side, we will prepare1 a sauté in the pan, and on the other side, we will cook the vegetables in a pot, later combining everything in the pot.
  • Firstly, it is necessary to soak the chickpeas and white beans the night before.
  • Prepare the vegetables by washing and drying them well.Cut the green beans into pieces about 4 cm long, the pumpkin and carrots into chunks that aren’t too small, and the pears whole (if they are small) or cut into pieces without the core, after peeling them.Add the chickpeas and white beans to a pot, cover with water, add salt to taste, and cook over medium heat for 45-50 minutes.
  • In a pan, prepare a sauté with olive oil, chopped onion, and grated fresh tomato. Once it’s golden and ready, add a teaspoon of paprika, making sure it doesn’t burn. When the sauté is done, add it to the pot where the other ingredients are cooking, along with some saffron threads and a tablespoon of dried mint. This will allow all the flavors to meld together in the stew.
  • Next, check that the legumes are tender enough. Once they are, turn off the heat and let the stew rest for 5 minutes with the pot covered. Serve in deep plates, distributing the vegetables evenly in each dish, and you're done! You can garnish with a mint leaf for decoration.
